Summer Salad with Alessandra Nutrition

It's safe to say a fresh and tasty salad is the staple to any summer. Alessandra Nutrition shows us a fresh twist with her own version of a classic salad. Fresh rocket, crumbly feta, juicy pomegranate and delicious sweet potato will inspire you to look and feel your healthiest. High in anti-oxidants, and packed with vitamins and minerals, try this delicous and healthy recipe any time of the day, or add it to your weekly meal prep. For those who dare, try adding chili to give it a firery kick. 

Ingredients: (serves 4)
1 sweet potato, peeled and sliced
1/2 cauliflower - diced
1 pomegranate de-seeded
1 cup mixed leafy greens 
20g crumbled feta cheese
30mL extra virgin olive oil
1 teaspoon roasted chilli flakes
1. Pre-heat oven to 200 degrees Celcius or 400 degrees Fahrenheit. On a baking tray place sweet potato and cauliflower. Drizzle with olive oil and chilli flakes. Bake for 20-25 minutes or until golden brown.
2. On a large dish, place leafy greens and roasted vegetables. Add pomegranate seeds and feta cheese. Drizzle with remaining olive oil.
